Stress Fractures is the only map in the current beta that supports CTF. Type g_ctf 1 at the console to enable it. There will be more to come -- Penumbral Wake might make a fun CTF map.
The crosshair can be changed with cg_crosshair and the rest of the cg_crosshair_* cvars.
